Meatloaf Supreme Recipe

2 pounds lean ground sirloin beef (or ground turkey)
2 cups Instant Stuffing Mix for Chicken
1 cup Chicken Broth
2 eggs, beaten
1 Whole Red Onion, chopped
1 Red Pepper, chopped
1 1/2 Tablespoons Garlic
1/4 Cup Dark Brown Sugar
2/3 cup Barbecue Sauce, divided
Salt and Pepper to taste

1.Preheat oven to 375 degrees, Mix all ingredients except 1/2 the barbecue sauce in a large deep bowl.
2.When mixed, drop into a large baking dish, preferably 13 inch by 9 inch.
3. Shape mixture the into an oval loaf, then top with remaining 1/2 of barbecue sauce.
4.Bake for 1 hour uncovered or until cooked through.

Makes approx. 8 servings


-Use A sausage stuffing in place of chix stuffing, add sage, remove barbecue sauce and replace with 1/2 cup dijon or honey mustard.

-Substitute ketchup for the barbecue sauce

-Substitute bread crumbs for the stuffing mix
